Umami Taste Sensitivity
TAS1R3 encodes a subunit of the TAS1R1/TAS1R3 heterodimeric receptor that mediates umami (L-glutamate) taste perception. The rs307377 T allele (Ala110Val) alters the extracellular venus flytrap domain of TAS1R3, reducing receptor sensitivity to monosodium glutamate. In a study of 242 Japanese subjects, carriers of the T allele showed significantly lower umami taste sensitivity scores compared to CC homozygotes (p = 0.009).
